ODOR:
A delicate aroma of Champagne roasted pear, with subtle notes of dried pear. White blossoms and brioche notes are imparted by the years of lees aging of the sparkling wine in the Champagne bottle.
TASTE:
Restrained sweetness and well-integrated acidity. Delicate flavor of the Champagne roasted pear with subtle tannin notes in the fine finish.
Origin and production:
We combine the finest raw material that meadow fruit can offer with the most elaborate production: The rare Champagne roasting pears now grow on over 100-year-old giant trees.
The harvest from small farmers is hand-picked, and through the elaborate post-ripening process of the pears in our special "sweating" method, the aromas in fragrance and taste are developed to their peak.
After pressing the Champagne pear, we convert the existing fruit sugar into alcohol through gentle first fermentation, thus creating the sensory diversity.
The champagne is then bottled and undergoes a second fermentation.
After at least three years on the lees, further typical notes of the wine develop.
